This is not another silly New Year's Resolution.
I've caved to the voice of my celiac friend and gone gluten free. I've also taken it to the next level thanks to her inspiration speeches and I'm dairy free. I admit it's crazy but I thought it would be worth a try to see if it improves my health. It's not like I have serious issues...well at least that's what my mom says. It's about having more energy and helping my digestive system.
It really took me a long time to do this. In fact, I tried going dairy free a few months ago and it was a nightmare. Dairy has been a staple of my diet. I had to convince myself that this was worth giving at least a month. But Seth keeps asking me what I'm going to do if this works? Yikes, I'm not ready to think about that.
It has been a week and I haven't intentionally cheated at all. I usually lack willpower when it comes to passing up food. But this has been surprisingly good. Mainly because my personal chef keeps me in check and has been very supportive.
On a side note, today was day one of our training for a half marathon later this spring. We've got an aggressive training schedule with five runs a week. If you're worried about me eating carbs for energy, don't fret. I can still eat potatoes, rice, corn tortillas, and many other gluten free carbs. I'm still consuming plenty of calories.
But there are a few things that I am really going to miss....ice cream and pizza.
